Pancetta comes from sweet, tender pork bellies and is the Italian equivalent of our domestic, breakfast bacon. Pancetta is a dry-cured product that has been salted, spiced (usually with nutmeg, pepper, fennel, dried ground hot peppers and garlic) and dried for about 3 months. Different varieties are produced in various regions of Italy.

Its delicate, light taste makes it a great starter for red or white pasta sauces, soups, breakfast dishes, combined with egg and cheese pasta dishes, such as Spaghetti Carbonara, with added tomatoes, and for dishes like Sugo All'Amatriciana.
