Spinach Pie
Crust
- 2 ½ cups flour
- 2 tsp. baking powder
- ½ tea salt
- ½ cup shortening
- 2 eggs
Filling
- 2 pkgs. Fresh spinach
- 1 clove garlic, minced
- ½ cup grating cheese
- salt & pepper to taste
- 1 small can sliced black olives

- Mix dry ingredients.
- Cut in shortening.
- Roll ½ out about ¼” think and place into 12” pyrex pie pan.
For Filling:
- Wash spinach and sprinkle with salt.
- Do not cook, but place in a large bowl and work with hands until moisture is released.
- Drain well.
- Mix with remaining ingredients and add a little oil. Place in pie crust.
- Cover with top crust.
- Pierce crust top in several places for air vents.
- Bake at 350° for about 1 hour.
