Spinach Pie

Crust
  • 2 ½ cups flour
  • 2 tsp. baking powder
  • ½ tea salt
  • ½ cup shortening
  • 2 eggs

    Filling
  • 2 pkgs. Fresh spinach
  • 1 clove garlic, minced
  • ½ cup grating cheese
  • salt & pepper to taste
  • 1 small can sliced black olives


  1. Mix dry ingredients.
  2. Cut in shortening.
  3. Roll ½ out about ¼” think and place into 12” pyrex pie pan.

  4. For Filling:
  5. Wash spinach and sprinkle with salt.
  6. Do not cook, but place in a large bowl and work with hands until moisture is released.
  7. Drain well.
  8. Mix with remaining ingredients and add a little oil. Place in pie crust.
  9. Cover with top crust.
  10. Pierce crust top in several places for air vents.
  11. Bake at 350° for about 1 hour.
