Complimentary Meatless Pie
¾ cup raw brown rice – cooked and set aside
½ cup dry beans – red or black (to be soaked and cooked night before) and set aside or 2 cans kidney beans
1 tbsp. butter
2 cups chopped onions
1 tsp. salt
½ tsp. Worcestershire sauce
2 eggs, beaten
1 cup milk
1 tsp. crushed dried tarragon
1 cup cheddar cheese, grated.

- Sauté onions in butter until golden – set aside
- Beat milk into eggs. Stir in cheese, salt, tarragon and sauce. Fold in onions, beans, and rice.
- Place in lightly oiled 10” pie plate
- Bake at 325° 20-30 minutes until custard is set and edges are brown.
- Let set for 10 minutes and serve in wedges.
