This well known Italian salami originated in the Genoa region of Italy .  Genoa Salami is mildly spicy and is made from pork seasoned with garlic, salt, peppercorns, wine and is then dry cured like most other Italian salami.  This Genoa salami is the cornerstone of any great Italian sandwich or antipasto.
